In my SSH Client trace I see my client reporting:

Supported Public Keys ssh-dss,ssh-rsa

I then see in the debug trace the remote server replying with:

Supported Public Keys ecdsa-sha2-nistp256,rsa-sha2-512,rsa-sha2-256,ssh-ed25519,ecdsa-sha2-nistp521,ecdsa-sha2-nistp384

We're on EDTFTPJ/PRO v6.2.0 - so I know the "edcsa" are not supported (until we update to v7.0.0).

But should we be able to connect with the client "ssh-rsa" and the server as "rsa-sha2-256"?

No, you need the client to support "rsa-sha2-256" to connect, not "ssh-rsa".
